Cucumber Dill Dressing

This cool summer sauce is great on pasta salads, green salads, in a pita pocket topping falafel and hummus or as a dip for veggies, pretzels, chips, crackers or toasted pita triangles. It is sometimes referred to as Tzatziki, a traditional Greek recipe.

Ingredients:

  • 1/2 cup non fat Greek-style plain yogurt
  • 1 Tbsp extra-virgin olive oil (garlic-infused optional)
  • 2 cloves garlic, minced*
  • 2 Tbsp fresh dill, chopped
  • 1 cup cucumber, skinned, seeded and finely chopped
  • Fresh ground black pepper to taste

Directions:

In large bowl, combine all ingredients. Whisk together or puree in food processor/blender for creamy texture. Chill in the refrigerator for at least 30 minutes before serving.

*use garlic press and let sit for 15 minutes before adding to bowl to enhance potency of cancer fighting nutrients.
